Happy GFCF Halloween Cupcakes

Halloween means class parties. Which means lots of treats that my son is unable to partake in. So, what's a mom to do?

Make GFCF cupcakes for the whole class to enjoy.. of course!















These are one bite mini GFCF cupcakes - made with Pamela's Luscious Chocolate Cake Mix. Topped with dairy free frosting and Halloween Pumpkin Peeps - yep, peeps are Gluten Free!

Brick SEPTA & Challenger Halloween Festival



Today was a perfect fall day. Sunny and crisp! Despite me having a wicked case of laryngitis, we headed out to the Brick SEPTA & Challenger sponsored Halloween festival. There was a hayride, pumpkin painting, food & treats, and inflatables. All of the kids had a blast - as usual.



Alex was dressed as a hot dog which got a lot of giggles and smiles. A few friends that are 'in the know' asked if he was a gluten free hot dog. Belle didn't want to wreck her Sleeping Beauty costume so she dressed up from 'the costume reserve' (I hit Target after Halloween when the costumes go to 90% off so she has a lot of dressup costumes). She wore a Bat princess outfit that easy to move in and looked cool too.


Brick Township Mayor Acropolis stopped by and was all smiles. Somehow he ended up being the one who was handing out cotton candy and popcorn to the kids.

Betty Crocker Gluten Free Fruit Snacks Giveaway

...Betty Crocker has done it again!

I was excited to learn that Betty Crocker Fruit Snacks are now GLUTEN FREE! In the past I have shyed away from these types of packaged grocery store snacks but after revisiting the ingredients, I have had a change of heart. Each packet is under 100 calories, made with real fruit, a source of vitamin C, and low fat. Yes, they do have sugars and corn syrup but I think in moderation they aren't the enemy!

I've been tossing one of these packaged snacks in my son's lunch box the past few weeks and he's enjoyed them quite a bit. He especially liked the Create-A-Bugs fruit snacks which are right up his 8 year old insect loving alley. I'd buy these again!

Plus, my son's school collects the Box Tops for Education and so many of his GFCF and organic foods don't have these, so he was excited to see them and quite insistent that I get the scissors and cut them off right away. What he doesn't quite get is that they win a pizza party for the class who wins - so its not like he can really partake in the prize (without me making him his own GFCF pizza, which I have done when his class has won in the past).

Tried CHREESE? Gluten Dairy & Soy Free Cheese!

One of the reasons why a lot of people give up on the GFCF diet is that kid cuisine tends to revolve around WHEAT and DAIRY. Think about it - Pizza, Chicken Nuggets, Macaroni & Cheese, Grilled Cheese. All of these things are GFCF laden. It can be tough. Before my son started on "the diet" he lived on these things also. He would drink milk, gulp down yogurt tubes, and could make his own KRAFT EZ-MAC as a kindergardener. In the beginning it was so tough to try to make him GFCF substitutes for his kiddie cuisine items that he loved so much.

Macaroni and Cheese was a tough one, but I found a way of making it with Quinoa Elbow noodles and Vegan Gourmet Cheese. Alex ate it but I had a few complaints.

1. The Vegan Cheese was soy based and while we are lucky that Alex can tolerate soy, it isnt really good for boys to consume a lot of. We are trying to cut back on soy.

2. The Vegan Cheese I was using didn't melt down easily

3. The smell of this stuff was noxious.

On a few occasions I had purchased the IAN'S Mac & NO Cheese frozen lunch for Alex and the "cheese" sauce was less noxious smelling. Alex ate it up and it was convenient in a pinch but these are very expensive for a single serving.

Then I found Chreese from Road's End Organics. Chreese is a Gluten Free, Dairy Free, Soy Free, Organic "cheese" sauce substitute.

You can get Chreese in a bunch of different products like a Boxed Gluten Free Macaroni & Chreese or Chreese Mix Packets . I bought the packets to mix up Chreese sauce at my local health food store for $1 a piece and it is so easy. To make it you simply mix up the dry mixture with water over medium heat and stir it til its the right consistency. I added a teaspoon of coconut milk to it so that it would be a little bit more creamy since I was using it for Mac & Cheese for Alex. I made his GFCF Mac & Cheese using his elbow noodle of choice - Quinoa Elbows with the Chreese and was pleased how it came out.

The PIXAR Lamp!

One of the highlights of our trip to Disney was taking Alex to the PIXAR section at Hollywood Studios.















Where he got to see a real signing and dancing PIXAR Lamp. Needless to say this was kind of like a dream come true for him since he is obsessed with the PIXAR Lamp and, well.. he basically worships it.

















A couple times an hour the Pixar lamp comes out and from behind the black shutters and does a song and dance.
