GF/CF Cooking with Kids - Peach Crisp

So.. last monday I went peach picking with Belle and then on Wednesday we had our food co-op pickup. Now, my kids love fruit and will eat it like candy - but we had way too many peaches. So, since their father had to go help his Dad with his office computers I decided to do one of my favorite things to do with my kids. Baking. Both kids enjoy helping out in the kitchen, especially Belle. Alex wanted a chef hat and was mad we couldn't find it so he just wore and Apron and played Wii - um.. ok, whatever works. Belle and I put on our little nauseatingly adorable matchy matchy floral aprons and of course she kept bossing me around to put on my matching mit about 500 times.

Here's what you need to make gluten and casein free Peach Crisp...
  • 8-10 peaches
  • 1/4 cup of your butter substitute of choice - if you are using margarine check carefully - many contain whey, milk and/or soy if you are also soy-free.
  • 1/2 cup Rice, Tapioca, or All-purpose gluten free flour
  • 1/2 cup Gluten Free Oats
  • 1/4 cup of packed Brown Sugar
  • 1/4 cup Organic Cane Sugar
  • 1 teaspoon of Cinnamon
Into a medium sized mixing bowl throw together the flour, oats, sugars and cinnamon and mix them with a spoon. Today I used the Bob's Red Mill four & gluten free oats it was what I had on hand. Then, cut in your butter subsitute into the mixture which is easiest if the butter is soft - but absolutely not melted, room temp is great.

Set aside your mixture and get to work on the peaches. 8-10 peaches will make a good sized crisp I blanched them first (boiling water) to make them easier to peel. Once they are peeled then you need to halve them and take the pits out. Once halved and de-pitted, I sliced up the peaches. Then all you do is mix the peaches with the crisp mixture that is already done. I let my daughter stir it all up and have fun - though you don't even really need to mix it all that much.
Then dump it all into a 9X12 or 10X10 baking dish (oiled or lightly sprayed with non-butter flavor cooking spray) and cook it for 45 minutes to an hour at 350 degrees. You'll know it is cooked when the peaches are nice and soft and gooey. Serve warm alone or over Rice Ice Cream... YUM. DeeLish!!!

Recipe options: use apples intead of peaches, add in raisins or nuts too.

OK--I actually have all those ingredients, except for the GF oats. I'm moving forward with this recipe! Thanks for sharing!

Where did you get the matching aprons? That's something I have to have!

We got them as a gift, but the brand is "Royal Albert" if that helps. I did however find that if you google "matching mother daughter aprons" you get quite a few results. Good luck! They are quite fun!!!
