A call to all GF/CF moms of Autism Spectrum kids

I, HelloKittieMama wanna know...

1)What is your child's favorite gluten and casein free food/treat.

2)Any good gf/cf recipes to share?

3) What food does your child miss the most since switching to the diet?

If you want to include any background info (age of child, how long on the diet, Dx, etc - feel free!)

Favorite Recipe: Pamela's Chocolate Cake or brownies

Biggest Transition: Loss of Mac & Cheese and adapting to loss of artificially flavored/colored candy!

Ah - you can make macaroni & cheese gf/cf - it isn't quite the same but put a little ketchup on it and you are good to go or if you can sneak in some meat or veggies and make it more casserole-like.. Hey - try it and see.

1) Noodles - use quinoa elbows or other macaroni/penne that gf - like whole rice grain. I personally like to use the quinoa because they are yellowy in color so they tend to look more 'right'.

2) Cheese - I'm blocking on the brand but there is rice based cheese - it comes in slices and looks almost exactly like kraft. Just cut a couple slices up and stir with canola and a little rice milk over the cooked noodles -- or if you allow soy you can use Vegan Goumet Cheddar but warning - it SMELLS horrible

Would that these fine suggestions would work! And with our ketchup obsession you would think they would! He despises those Quinoa noodles and claims that rice cheese smells like "vomit." Truly, he is so picky. But I haven't tried the Vegan Gourmet, so if I can find it, I'll get that and hide those noodles with it. Still if it smells the least bit yucky, he won't touch it!

Thanks for the ideas!!! I love the gorilla munch/cocoa plan! Now if he would just eat cereal with milk--only likes it dry. I'll try it with my nephew in the morning. I think he's had about all he can take of the GF/CF stuff...he's leaving tomorrow so he can return to his love of all things gluten!

Oh Elizabeth - all the substitute cheeses smell absolutely dreadful. I am honestly shocked that my son will eat it because he is VERY SENSITIVE to smell.. if something smells strong he tells us that his nose hurts. Surprisingly though he will eat the gfcf mac/cheese that we make him - tons of ketchup and usually an ice cube on it (out of habit). My husband moans and groans because he has to sit next to it and it smells so rank.
